Sweet Potato Breakfast Skillet

As much as I love cooking new and complicated dishes, I am an even bigger fan of cooking food that takes less than an hour from start to finish. This sweet potato skillet is one of my absolute favorites. It’s quick, healthy, tastes amazing, and will keep you well within your food budget. Even better than that, you’ll have enough to last you the whole week! Find the recipe below!   Ingredients: 1 large sweet potato, diced (small-med sized chunks) 3 large tricolored peppers or a bag of mini bell peppers, diced 1 link of Kielbasa, diced (or other protein of choice – works best with sausage). 1/2 large sweet onion, diced 1 pound asparagus or other veggie of choice, chopped 3 slices of bacon (optional – didn’t add it in the skillet pictured above, but it def adds flavor!), diced 1 clove garlic 1 tsp grated ginger (optional) 5 eggs Flavor god…

April Health & Fitness Challenge

So forget a New Year’s Resolution – this year definitely did not start off as I planned health or fitness-wise (when does it ever? lol). But no point crying over spilt milk – this month I’ll be jumpstarting my journey back to being whole spiritually, emotionally AND physically, and I hope you’ll join in! Now, a couple things to note as I have been down this road at least a dozen times before: there is no one-size-fits-all way to get the results you want to see when it comes to your health and fitness. Trust that I have tried almost every diet/workout routine in the book, and nothing worked until I really began to pay attention to my body and what it wanted instead of just simply copying what everyone else was doing. So while I’m going to be outlining my routine here and sharing some of my favorite healthy…

My Seven Tips to Living a Happy and Healthy Life!

So I’ve been looking for a way to describe this season I’m in (and I’ll definitely talk more about it in a couple weeks), but it’s kinda like Eudora Got Her Groove Back! It’s like I’ve got this crazy positivity all of a sudden – and it might be because I just came out of a ten-day Daniel fast last week (talk about spiritual and physical detox!) or because of that Sephora sale this past weekend, but whatever light was off somewhere suddenly switched on, and I’m loving it!  So I thought I’d share the good vibes and the top things I do/have done when I’m mentally, physically, and/or spiritually worn out or congested that help me live a healthier and happier life in all those regards. 1. Let go of weights and sin.  I wrote about (here) how what goes on in our spirit is directly correlated with what…

How did you end up losing soo much weight?

First of all, God is good LOL Secondly, I fell in love with exercise and clean eating. I work out at least an hour, at least 5 days a week (Except this week because I’m on a break because my workouts have been sluggish and my body needs to rest and recuperate.) But I’d say it’s true when they say it’s 70% diet. I used to exercise like a mule and still not see results. Now I don’t go as hard, eat much better, and the weight came off.
