Letter: God’s not dead, He’s not crazy either.

Sometimes when God tells us something, we think He’s crazy. I’ve had an absolutely crazy year and at the very beginning of 2016 when things seemed to be getting worse, I started getting panic attacks. I would wake up with my heart racing & I would cry and hyperventilate. One morning I was crying & hyperventilating so hard I thought there was no way I would make it to work. Then I heard a small voice say, “Call Eudora”. I shook my head & told myself “No, how can I call Eudora? I mean we’re friends but we’re not that close, I don’t think I’ve even called her before, besides it’s 7am what am I going to say when she answers?, What if she doesn’t answer, what do I tell her later?”. “What Am I On Earth For?” This question is  at the very core of our human existence. Why me? Why now? Why here? Why to this family and these circumstances? Basically, our whole lives, in one way or another, we try to find the answer to this  question of Purpose. Because as Christians, we don’t want to live any kind of lives – we want to live Purpose-driven ones. And to do that, we need to understand our unique Purpose. This One Is For The Dreamers…

This picture of me jumping off of a ledge (the kind of thing you do on vacation these days) was taken this afternoon in Old San Juan after lunch at Cafe Puerto Rico. As I write this, I am sitting on my balcony, staring out at the beach and scrolling through work emails. How did I get here? Well, I’ll tell you. Around this time last year, I began to feel like it was time to leave my job. Lessons From A Closet Christian

I remember the first day I became a Christian vaguely. I must have been 5 or 6 and when the preacher asked who wanted to give their life to Christ. I shot up without a second thought. It seemed like the appropriate thing to do at the time, because as far as I was concerned anyone who was willing to take the not-so–proverbial bullet for me deserved some sort of allegiance. Either that or my father nudged me and gave me a dirty look for remaining seated, but let’s stick with the former version of the story lol. How Do I Read the Bible?

Hi, I don’t know how to read my bible. I do devotionals that reference bible verses but I want to actually read the Bible. Where do I start? Hey love! There are a lot of different ways to read the Bible, but Devotionals are a great place to start. I’d suggest starting off by reading for context. So when you read those Bible verses that come with the devotionals, read the entire chapter as well. Figure out what exactly the writer wanted to say. The second way I’d suggest reading it is chronologically – at the beginning. There’s a reason the Bible is in the order it’s in – it tells a story. So start at the beginning and work your way through to the end. And before you open it each time, pray. Ask the Holy Spirit to bring the words alive to you in ways you never imagined….

Zucchini Boats

Zucchinis are probably one of the more versatile vegetables you can have in your kitchen. You can use them to make noodles and cakes and everything in between. I always have a few in my fridge if I’m looking for a quick-fix meal, or to bake something clean. Here’s one of my favorite quick zucchini recipes! Ingredients 1 pack minced turkey  1 tbsp Tomato paste 3 tbsp Olive oil Can of diced tomatoes Spices (flavorgod garlic lovers is my fave! Italian seasoning is great as well for this recipe) Salt Black Pepper 1/2 Onion, diced 2 cloves garlic, minced 1 zucchini Favorite cheese (optional) Instructions Set oven to 350 In a medium pan, heat 2 tbsp of olive oil. When hot, add minced turkey and your favorite spices/seasonings. Cook for 10 mins, or until there are no traces of pink. Be sure to break up larger chunks as you stir…

Easy One Skillet Chicken Dinner

I loooooove cooking, but I also haaaaaaaaaaaate washing dishes, so cooking becomes a bit of a challenge for me. TBH, I’m praying for a husband who loves cleaning up, because that would be a match made in heaven lol. Alternatively, if I only have to use one pan in my cooking, I’m in heaven. Chicken thighs are always yummy, and so I came up with this simple one skillet chicken recipe for dinner one day, and I thought I’d share! Ingredients Chicken thighs, skin-on, bone-in Salt Black pepper Flavorgod seasonings (or your favorite seasoning mix) rosemary 1 tbsp ghee (clarified butter) baby bella mushrooms, asparagus, purple onion, and any other veggies you love lemon Instructions Preheat oven to 425 F Clean chicken and pat dry with paper towels Season with salt and black pepper and other spices of your choosing. Blueberry Cornmeal Pancakes

There’s nothing like waking up on a Saturday morning to the smell of pancakes. Well, some of us can’t exactly wake up to it, because, well, we’re making em – but it’s still an amazing smell to have wafting around your apartment. If you love pancakes and you love cornbread, this is the recipe for you.
